Ingredients

5 lbs. of lamb

12 avocado leaves

8 garlic cloves peeled

8 cloves

8 black peppercorns

3 tsp of salt

18 cups of water

3 tsp of vinegar

 

Ingredients for Salsa

5 dried guajillo chiles

1 dried mulato chile

3 dried morirta chiles

1 medium tomato

3 garlic cloves peeled

2 avocado leaves

3 cloves

2 black peppercorns

Salt to taste

Directions

For Tacos de Barbacoa

1. In a large pot, place a steamer or metal cooking rack.

2. Season the lamb with salt on both sides.

3. Pour some vinegar on the meat and place on the steamer.

4. The meat should not touch the water (it will be cooked by the steam).

5. Place the avocado leaves and garlic cloves on the lamb and sprinkle with cloves and pepper.

6. Cover the pot with a cotton kitchen towel and then place the lid on tightly. Cook for about 2 hours on medium to high heat until the meat is tender.

To serve, remove avocado leaves, garlic, cloves and pepper, place the meat on a serving plate to allow everyone to make tacos with warm tortillas. Garnish with cilantro, chop onion and lime juice, don’t forget the spicy salsa!

 

For the Salsa

1. Boil all ingredients for about 5 minutes. Let it cool and then mix together in the blender

2. Pour into a pot and add a tablespoon of olive oil, bring to a boil until it turns an intense red and then simmer for a few minutes.

3. Let it cool.
