Serves 2

Ingredients

1 lb. of fresh albacore or Yellowfin tuna (not canned)

1 red onion

½ tomato

¼ cucumber (remove the seeds from the cucumber)

¼ to ½ cup of cilantro to taste

10 juicy limes

3 tablespoons of salt

Half tablespoon of yellow mustard

One tablespoon of ketchup

Freshly ground black pepper to taste

2 tablespoons vegetable oil

Directions

1. Cut the fish into ½ inch cubes and place into a bowl.

2. Squeeze the lime juice over the fish and add 3 tablespoons of salt. Mix well and let stand for an hour (the fish is cooked with the acid of the limes and salt).

3. Meanwhile, chop the red onion into very thin slices and then rinse with cold water.

4. Thinly slice the tomato and the cucumber.

5. Finely chop the cilantro.

6. To serve, place tuna in a bowl, add a little black pepper to taste and the vegetable oil.

Top with a slice of tomato, cucumber, some red onion, and cilantro. Add half a tablespoon of mustard and one tablespoon of ketchup. Toss together gently. Taste and adjust seasonings.

You can serve this delicious ceviche dish with plantain chips.
